Hello there my dear readers, 💗
Today I'm going to share my very own version of Kelantanese Stuff Squid ( Sotong Sumbat Kelantan ) It's succulent and delish !!!
Haven't tried this dish before? Now you should definitively MUST TRY !! It's a bit sweet though but I promise you , you'll be so satisfied and pleased with the dish that you will want more !!
Here's the recipe for you. This recipe is for 2-3 person. For more, please adjust the quantity in the recipe. ✌💓
INGREDIENTS
- Sticky Rice ( Soak for at least 1 hour )
- 5-6 Squids ( Clean inside out and let it dry ) Do not throw away the squid's head. (For use later)
- 5pcs Pandan Leaves
- 3 small chunks of Palm Sugar ( depends on how sweet you want it to be)
- Coconut milk
- Salt
Soak with water for 1 hour with a little bit of coconut milk |
⇉ Pour a bit of coconut milk ( half cup ) into the soaked sticky rice ( in water )
⇉ Stuff the squid with the soaked sticky rice ( Make sure NOT to put in to much rice. - recommended half from the squid's body )
⇉ Put back the squid's head on the end and poke it tightly with a toothpick to hold the sticky rice from coming out when cooked
⇉ Place the Pandan leaves nicely at the bottom of the pan.
⇉ Put in the squids and pour in the coconut milk . Make sure that the coconut milk is poured just enough to cover the squids only.
⇉ Don't forget to put in the Palm Sugar , Salt to taste .
⇉ Make sure the fire is in low mode and close with lid. Let it simmer.
⇉ Cook it until the broth (coconut milk + palm sugar ) is thicken and caramelized.
⇉ You check if its done when the squid looks quite full .
And YOU ARE DONE !!! That's is all !! Enjoy your Stuff Squids with your family for tea time or just as a snacks while watching TV together. Whatever your reason may be !! 😉
I hope you'll enjoy this dish as much as I do !! Good luck and BON APPETITE ' 💓😜
